Brussel Sprouts Can Be Good!
Jeff and I are loving this new brussel sprout recipe. It's so good I will share it with you!1.5 lg brussel sprouts
1 lb thick cut bacon (apple wood even better)
1.5 lb chicken tenderloins
2 gold delicious apples
2-3 tbsp of your favorite bbq sauce (I like honey bbq)
Cut the bacon and chicken in to 1-1.5 inch pieces.
Cut the base off the sprouts and halve them, quarter them if they are large.
Dice your apples to bite size cubes.
*The goal is to make everything the same size*
Toss the bacon in a large saute pan or skillet and cook until crispy or to your liking. Take the bacon out. Add the sprouts to the pan (if you don't want to cook the sprouts in the drippings, drain the pan and use olive oil). Saute until almost tender, now add the chicken and salt and pepper to taste. Once the chicken is cooked all the way through, the sprouts should be tender. Add the bacon and apples back to the pan and toss for about a minute with the bbq sauce and serve! Serves four, or two with leftovers for lunch.
For the vegetarians, use tofu instead of chicken and use bacon substitute from Boca or Good Start.
